Pineapple Teriyaki Chicken Bowl


  • 1 pineapple (serves 2)
  • 1- 1 1/2 pounds boneless, skinless chicken breasts, cut into 1-inch chunks
  • ¼ cup of soy sauce
  • 1 clove (1 tbsp) of garlic, minced
  • 1 tsp ginger
  • 4 tablespoons of chopped fresh pineapple
  • ¼ cup of honey
  • ¼ cup of teriyaki sauce
  • ½ cup brown sugar
  • ¼ cup pineapple juice
  • 1/2 teaspoon sesame seeds
  • Salt and pepper
  • Vegetable oil
  • steamed white rice
    1. Cube chicken into bitesize pieces, add salt and pepper
    2. Cut pineapple vertically in half then hollow out inside of pineapple to make the bowl for the meal.
    3. Add vegetable oil to pan heat then add garlic for a minute then cook chicken until brown
    4. Add the soy sauce, teriyaki sauce, honey, brown sugar to the chicken pan to caramelize. Add pieces of the fresh pineapple and the juice to the chicken pan. 
    5. Steam white rice while cooking chicken.
    6. Add chicken into one side of the pineapple and white rice into the other side on the pineapple add sesame seeds and enjoy!
